This recipe was given by Madison! It's a refreshing summer delight!


Allergy Information: Can be made top 9 free! Free of eggs, peanuts, tree nuts, wheat, soy, fish, shellfish, and dairy depending on if you substitute regular milk for another kind.


I recently made this recipe in the midst of school stress and not having to eat anything in between breaks of studying for finals. I cannot have normal ice cream because it has egg, so that makes me itchy and break out in hives. I wanted a perfect summer treat to help cool me down in the summer without having to feel left out.


Tools:

  • A spoon

  • A blender

  • A big enough cup or bowl to mix in

  • A storage container

  • A serving dish

Ingredients:

  • Frozen Blueberries

  • Milk (you may substitute for a different kind of milk if you wish)

  • Some agave or other sweetener (sugar, maple syrup, honey, etc.)


Instructions/steps:

  1. Put your desired amount of frozen blueberries into a blender and pour the milk just enough to cover the blueberries.

  2. Start mixing, after a few minutes of mixing, add a tiny bit of agave. You can add as much as you would like, but you won't need a lot.

  3. After mixing in the agave, pour the blueberry mixture into a storage container big enough. You may need multiple containers depending on how much ice cream mixture you have made.

  4. Chill in the freezer till it is the right ice cream consistency. Once the ice cream is set/ready, you can eat it out of the storage container or serve it in small bowls.

Note from Shae: My mom and I love making trifles. They are so easy to make and you can pretty much add any ingredients that you want. Our favorite is a chocolate brownie trifle, but for the Fourth of July, we love making our red, white, and blue trifle. It has layers of GF vanilla cake, DF cool whip, DF vanilla pudding, strawberries, and blueberries. So delicious and a great dessert to bring to any picnic.

Ingredients:

  • Favorite vanilla pudding, I used this DF recipe:

    • 2 cups of unsweetened almond milk

    • 2 egg yolks

    • 2 ½ tbsp of sugar

    • ⅛ tsp of salt

    • 2 tsp of vanilla extract

    • 2 ½ tbsp of cornstarch

    • 1 tsp of DF butter

  • Favorite GF vanilla cake mix, I always use Hungry Harry’s yellow cake mix but I didn’t have any in my pantry, so I used Hungry Harry’s muffin mix and it still tasted amazing.

  • So Delicious DF coco whip

  • Fresh strawberries

  • Fresh blueberries


Directions/Steps:

  1. Prepare vanilla cake, bake and let cool

  2. Prepare pudding and allow to set in fridge for 2 hours

  3. After pudding sets, remove from fridge and set aside

  4. Cut cake into small pieces (you can break it apart also)

  5. Slice strawberries

  6. Start layering the ingredients

  7. First layer: Vanilla cake

  8. Second Layer: DF coco whip

  9. Third layer: Strawberries

  10. Fourth layer: DF vanilla pudding

  11. Fifth layer: Blueberries

  12. Sixth layer: DF coco whip

  13. Repeat steps until you get to the top of the bowl or trifle dish

  14. Lastly, top with a layer of DF coco whip and decorate with fruit

Summer is finally here!! And that means backyard barbeques, pool time hangouts, and probably lots of food. I know I have struggled with feeling left out during the summer when food is always a big part of friend and family gatherings! Some things that I try to do for something like a family barbeque is offer to bring a side dish and a dessert (my go-to is always pasta salad for a side dish) so that way you can eat the side and dessert (and you can eat something before and after in case that won’t fill you up) but that way you are still eating some of what everyone else is eating. Another thing I often do when I’m just hanging out with my friends and I know there will be snacks is bringing something to share for the same reason of just being able to eat what everyone else is eating. When you do these things, it is often a good idea to either get your food first or to pre-package some earlier on so as to avoid cross-contamination. An important thing to remember, however, is that it is perfectly fine to bring your own food and I know it can be hard because you don’t want to feel judged by your friends or have your family start asking a lot of questions but it is important to feel safe around the food you are eating. Another thing to remember is that you should not expect the host to have food for you, many times they will forget you have food allergies or they won’t even think about it so you have to be prepared, and even if they have food for you when you get there you should bring food just in case you don’t feel comfortable eating that food. Going to group gatherings can be hard when you know there will be lots of food but you don’t want that to get in the way of having a fun summer!
